Pomelo, an exciting new 120-seat, cocktail-focused restaurant coming to Orlando, is seeking an Executive Sous Chef to join our opening leadership team.
Led by Chef Hung Huynh, Pomelo will feature chef-driven, refined-casual dishes inspired by Vietnamese, Thai, and broader Southeast Asian cuisines. We are building a culinary program centered on quality, consistency, strong technique, and genuine teamwork.
This is an excellent opportunity for an experienced Sous Chef or strong Junior Sous Chef ready for the next step, working directly alongside Chef Hung to help establish the systems, standards, and culture of a brand-new kitchen.
Compensation: $70,000–$75,000 annually, based on experience

Tentative Start: First Week of November 2026
Support daily kitchen operations and service execution
Lead, train, motivate, and develop a small culinary team
Work actively on the line and lead by example during service
Maintain exceptional standards for food quality, presentation, cleanliness, and organization
Execute and enforce established recipes and culinary direction
Assist with ordering, inventory, scheduling, food cost, and waste control
Maintain food-safety and sanitation standards
Help create a professional, accountable, and team-driven kitchen culture
Previous Sous Chef, Junior Sous Chef, or comparable kitchen leadership experience
Strong culinary foundation and cooking technique
Organized, dependable, hardworking, and self-motivated
Coachable and comfortable executing the Executive Chef's vision
Strong communicator who leads from the front
Calm, focused, and efficient during high-volume service
Vietnamese, Thai, Southeast Asian, or other Asian-cuisine experience is a plus, but not required
